Taralinga Estate Olive Oil and Lemon Basil Sorbet

Olive Oil and Lemon Basil Sorbet


  • 2 cups water
  • 1 cup sugar
  • 1 cup fresh basil leaves
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/4 cup Taralinga Estate olive oil


  1. In a saucepan, combine water and sugar. Heat until the sugar dissolves.
  2. Add basil leaves to the syrup and simmer for 5 minutes. Remove from heat and let it steep for 20 minutes.
  3. Strain the syrup and discard the basil leaves.
  4. Stir in lemon juice, lemon zest, and Taralinga Estate olive oil.
  5. Chill the mixture in the refrigerator for at least 2 hours.
  6. Process in an ice cream maker according to the manufacturer's instructions.
