Olive Oil and Lemon Basil Sorbet
Ingredients:
- 2 cups water
- 1 cup sugar
- 1 cup fresh basil leaves
- 1/2 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/4 cup Taralinga Estate olive oil
Instructions:
- In a saucepan, combine water and sugar. Heat until the sugar dissolves.
- Add basil leaves to the syrup and simmer for 5 minutes. Remove from heat and let it steep for 20 minutes.
- Strain the syrup and discard the basil leaves.
- Stir in lemon juice, lemon zest, and Taralinga Estate olive oil.
- Chill the mixture in the refrigerator for at least 2 hours.
- Process in an ice cream maker according to the manufacturer's instructions.
