Taraling Estate Olive Oil and Citrus Summer Salad


  • Mixed greens (arugula, spinach, lettuce)
  • 1 orange, segmented
  • 1 grapefruit, segmented
  • 1/4 cup sliced almonds, toasted
  • 1/4 cup crumbled feta cheese
  • 1/4 cup Taralinga Estate olive oil
  • 2 tablespoons white balsamic vinegar
  • Salt and pepper, to taste


  1. In a large bowl, combine mixed greens, orange segments, and grapefruit segments.
  2. In a small bowl, whisk together Taralinga Estate olive oil, white balsamic vinegar, salt, and pepper.
  3. Drizzle the dressing over the salad and toss gently to coat.
  4. Top with toasted almonds and feta cheese before serving.
