Ingredients:
- Mixed greens (arugula, spinach, lettuce)
- 1 orange, segmented
- 1 grapefruit, segmented
- 1/4 cup sliced almonds, toasted
- 1/4 cup crumbled feta cheese
- 1/4 cup Taralinga Estate olive oil
- 2 tablespoons white balsamic vinegar
- Salt and pepper, to taste
Instructions:
- In a large bowl, combine mixed greens, orange segments, and grapefruit segments.
- In a small bowl, whisk together Taralinga Estate olive oil, white balsamic vinegar, salt, and pepper.
- Drizzle the dressing over the salad and toss gently to coat.
- Top with toasted almonds and feta cheese before serving.
