Sicilian Lemon and Olive Oil Pasta

This dish is a light yet flavourful celebration of summer, featuring the zesty freshness of lemon and the rich depth of Taralinga Estate olive oil. Perfect for a quick, elegant meal, it combines al dente spaghetti with a lemony olive oil dressing, Parmesan, and fresh basil, creating a harmonious blend of simplicity and sophistication.



  • 400g spaghetti
  • Zest and juice of 2 lemons
  • 1/2 cup Taralinga Estate olive oil
  • 1/2 cup grated Parmesan cheese
  • A handful of fresh basil, chopped
  • Salt and black pepper, to taste
  • Red pepper flakes (optional)


  1. Cook the spaghetti according to package instructions until al dente.
  2. In a bowl, whisk together lemon zest, lemon juice, and Taralinga Estate olive oil.
  3. Drain the pasta and return it to the pot. Pour the lemon-olive oil mixture over the pasta and toss to coat evenly.
  4. Add grated Parmesan, basil, salt, black pepper, and red pepper flakes. Toss again.
  5. Serve warm, garnished with extra basil and a drizzle of Taralinga Estate olive oil.
