Olive Oil and Herb Grilled Vegetables

A vibrant medley of summer vegetables grilled to perfection. The Taralinga Estate olive oil enhances the natural flavours, while a mix of fresh herbs and garlic adds an aromatic touch. This healthy, colourful side dish is ideal for barbecues or as a light main course.


  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 red bell pepper, cut into strips
  • 1 eggplant, sliced
  • 1/4 cup Taralinga Estate olive oil
  • 2 garlic cloves, minced
  • 1 tbsp mixed fresh herbs (thyme, rosemary, oregano)
  • Salt and black pepper, to taste


  1. Preheat your grill to medium-high heat.
  2. In a large bowl, toss the vegetables with Taralinga Estate olive oil, garlic, herbs, salt, and black pepper.
  3. Grill the vegetables in batches, turning occasionally, until tender and charred, about 4-5 minutes per side.
  4. Serve the grilled vegetables with a final drizzle of Taralinga Estate olive oil.
