  • 4 large ripe tomatoes, diced
  • 1/4 cup Taralinga Estate olive oil, plus extra for drizzling
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • Salt and pepper, to taste
  • 1 baguette, sliced and toasted
