Grilled Peach and Olive Oil Salad

A delightful salad that combines the sweetness of grilled peaches with the creamy tang of goat cheese, all set against a backdrop of fresh greens. The light dressing, made with Taralinga Estate olive oil and balsamic vinegar, enhances the natural flavours, creating a dish that's both refreshing and satisfying.

  • Ingredients:

    • 4 ripe peaches, halved and pitted
    • Mixed greens (like arugula and spinach)
    • 1 small red onion, thinly sliced
    • 1/2 cup goat cheese, crumbled
    • 1/4 cup Taralinga Estate olive oil, plus extra for grilling
    • 2 tablespoons balsamic vinegar
    • 1/4 cup pine nuts
    • Salt and pepper, to taste
  • Instructions:

    1. Brush peach halves with Taralinga Estate olive oil and grill until char marks appear.
    2. Whisk together 1/4 cup Taralinga Estate olive oil, balsamic vinegar, salt, and pepper to make the dressing.
