Summer Mango Salsa

Ingredients (salsa):
  • 1 x Mango, finely diced
  • 1 x red capsicum, finely diced
  • 1 x small cucumber, finely diced
  • ½ red onion, finely diced (optional)
  • Jalapeños, diced (optional)
  • Fresh herbs (i.e. coriander), chopped
  • ¼ lime or lemon juiced
  • Salt & pepper to season

Method:
Finely dice all ingredients and add to salad/ serving bowl. Season with salt/ pepper and herbs of choice.

 

Enjoy it as a side with cooked meat or seafood, in wraps or tacos, or as a refreshing summer salad.
